The worst day of the whole trip was Wednesday. Jon and Z headed out, so that Z could work the next day and not be trapped in the rainy mountains. Jon was going to get a new shelter in town, since the one we’d picked up the day before refused to stay upright during the assembly process. And as soon as they left around noon, the sky opened up and proceeded to dump rain for nearly 8hrs. You try occupying a toddler in a tent for that long. I think I napped more than she did that day. Something about being in the woods builds up an appetite. Living closer to the land, building a fire for heat because the sun hasn’t crested the mountains and it gets cold at night. Hiking, chasing a toddler around camp, dodging sudden downpours. First thing in the morning and at the end of a long day, nothing sounds better than a hot meal. Except that trying to prep on a picnic table and do anything substantial on a camp stove can be laughable if conditions aren’t utterly perfect. So the challenge to myself, for spending a week in the mountains eating nothing but granola bars, oatmeal, cereal, sandwiches and sausages roasted over the fire sounded atrocious, was to figure out how to strike that balance. I’m very excited, my whole family is visiting for a week. We’re going camping in the Rockies with my beastie. Her first time camping, which is going to be wild, pun intended. The thing is, while I spent a lot of time outdoors, I haven’t been camping in like 8 years. That time, it was actually part of my job. But anyways, the food related part.
I have a hard time with the idea of not cooking awesome meals in the middle of the woods and wild, but the reality is that gourmet is a pain in the ass with a picnic table and a camp stove. Read the rest of this entry
Sometimes you wind up scavenging your cupboard and fridge, trying to find something to make for dinner. My issue is that I can’t help but want to make awesomeness out of nothing.
I’ve had a pound of ground beef in my freezer for a week or so, begging to get used up. Assorted veggies, udon noodles and a pantry full of spices. So I thought, Asian meatballs! A quick pan sauce for the veggies, toss it with the udon and an easy dinner would be had. Read the rest of this entry
The greatest benefit to working nights on the weekends, as opposed to when I used to cook brunch at the hotel, is that I get the traditional Lazy Sunday experience. Trying to sleep through the sun blazing sharply through my eastern-exposed bedroom windows, praying the child doesn’t wake up before 8am, or at least can occupy herself with her toys before she remembers that she has parents and they are supposed to bow to her every tiny whim. Making a cup of coffee and figuring out if I feel like making breakfast or not.
